SALMON FILLETS WITH FENNEL AND DILL

This is an extremely simple second course, all it is is a salmon fillet coated with parsley and fennel seeds and dill seeds.

All you have to do is put it in a hot oven ( 200° c) for 10 to 15 minutes . . . and dinner is ready !!

SHEPPARD'S PIE

This is my version – it probably is not the real recipe but this is what I like to call it!!

What I do is cook a fair amount of ground beef and dress it with a few herbs and spices, then I spread it on the bottom of an oven dish. I prepare some nice and rich mashed potatoes and spread them on top of the ground meat.

The ingredients here are ground beef (fresh) potatoes, onion, oil, parsley, milk, butter, spices (not hot)

LEEK AND POTATO SOUP

This is a classic – a nice creamy soup made with leeks and potato, a little bit of milk and a little bit of tyme.

Simple and warm, because it is a soup it will be delivered in a zip lock bag and you can pour it in a pot and heat it, maybe eat it with some croutons or just toast and butter . . . . mmmmm I can hardly wait to have it for dinner on Friday !!

"WINTER" PASTA AL FORNO

Tasty and comforting flavors that will blend together and make you feel loved !

This dish is made with short pasta like fusilli dressed with different vegetables like cawly flower and cabbage and leeks, with a little bit of crunchy pancetta to make it even more tasty . . . . all kept together with creamy white sauce . .. . yum !!

All you need to do is put the dish in a hot oven covered for 10 minutes and uncovered for an other 10 minutes or until it is nice and browned and crunchy on top.

A dish for 4 will be 20 Euro

PAPPA AL POMODORO

A local dish that is made with bread, tomato, garlic and olive oil. This is a great dish for children of all ages . . . . it is also good for school lunches as it is not bad at room temp also!!

The ingredients are Olive Oil, tuscan bread, tomato sauce garlic and salt – you may add red pepper to your dish if you like – I make it without because it is easyer to add it if you want it than to take it out if you don’t!

To heat up the pappa just put it in a pot over medium low heat, add a little bit of warm water or broth so that it will soften up and you can make it as solid or liquid as you prefer.

Drizzle some oil on top before you serve.

A dish for 4 will be 8 Euro.

7 Minute Icing

Seven Minute Icing


Amount Measure Ingredient -- Preparation Method-------- ------------ -----------------2 egg whites

1 1/2 cups sugar

5 tablespoons cold water


Place all ingredients over rapidly boiling water


Beat with wire wisk ( electric) for 7 minutes then remove from heat.

If desired you can fold in 1 tsp vanilla, or rum, or 1/2 cup chopped nutsor grated coconut or peppermint candy

4 ounces semisweet chocolate

6 tablespoons whipping cream

1 cup confectioner's sugar

1 teaspoon vanilla


Melt chocolate and butter in double boiler.


When melted add whipping cream and beat well.


Sift and add Confectioner's sugar and vanilla


Spread over cake while warm - it will get hard when cooled

Vanilla Butter Cake

Amount Measure Ingredient -- Preparation Method-------- ------------ ----------------- 2 3/4 cups cake flour

1 1/2 cups granulated sugar

3 3/4 teaspoons baking powder

3/4 teaspoon table salt

12 tablespoons unsalted butter -- at room temperature

3/4 cup milk -- at room temperature

1 1/2 teaspoons vanilla extract -- at room temperature

4 large egg


Have all ingredients at room temp.


Position a rack in the center of the oven and heat oven to 350° F ( 180°c).


Coat two 9 X2 inch round cake pans with nonstick cooking spray and linebottoms with parchment ( I used oil).


Sift cake flour, sugar, baking powder and salt into the bowl of a standmixer fitted with a baddle attachment. Mix on low speed untill allingredients are combined.


Add the softened butter in pieces that are about a tablespoon size and mixon low speed for 20 or 30 seconds - the mixture should look lumpy withlargest lumps the size of a hazelnut.


Add the milk and vanilla extract and mix on medium speed for 1 minute tothoroughly blend ingredients and areate batter. Scrape down sides with spatula.


Add the eggs one at a time mixing on medium speed for about 15 secondsafter each addition. Scrape down sides after the first two eggs


Divide batter equally between the two prepared pans.


Bake untill the cakes are golden brown and the tops feel firm but springback a little when tapped lightly with a finger. A pick inserted in thecenter of the cake should come out clean.


Set the pans on a rack, run a table knife around the edge of each cake andlet cool in pans for 30 min. Invert the cakes on a rack, lift the pans,peel off the parchment and let the cakes cool completely.


If baking ahead, wrap the cakes tightly in plastic after cooling.

Allegra's Birthday Cake



I made this cake in a roasting pan as there were going to be 20 kids + parents at the birthday party !

I doubled the recipe and it turned out quite well, but it took a long time to cook !!

I cut it in half and stuffed it with a nice layer of 7 minute icing . . . . so that it would be easier to swallow . . . . then I covered it with a double recipe of the chocolate icing.

When the icing was hard I asked Allegra how she wanted it, then decorated the cake with the 7 minute icing following her precise instructions . . . . then Allegra asked me to put little silver balls on the cake . . .. so I patiently put them all around the cake !!

I must say it wasn’t too much work because I baked the cake on Friday afternoon, and dressed it on Saturday morning – the party was Saturday afternoon . . . .

PIZZA DI PATATE


Pizza di patate is a typical dish from the south of Italy, it is a poor man’s dish but I find it tasty and healthy. Most kids really like it . .. .

This does not look like pizza, it is basically a kind of casserole where you have 2 layers of mashed potatoes (worked with egg butter and cheese) with a layer of ham and mozzarella in between. The top is a little bit crunchy.

This dish can be served at room temperature, or you can warm it in the oven at 120 for about 20 min. or each individual serving can be heated in the microwave. I have always found it great for school lunches !!

AMATRICIANA SAUCE

Amatriciana sauce is original of the Rome area, I know the original recipe is a little bit different than what I make, but this is what I was taught at home . .. .so that’s what I know how to prepare!

Anyhow this sauce has pancetta, onion ( this is actually the ingredient that should not be there according to the original recipe), and tomato sauce. The real recipe calls for hot red pepper, but I believe that you can always add it on your own . . . . but if you don’t like it you can never take it out again !!

So basically as your pasta is cooking, you heat up the sauce so it is ready to dress the pasta !
Enough sauce for 4 people will be Euro 7,00.

PORK FILLET INSIDE THE BAGUETTE

Pork fillet inside the baguette is one of my favourite . . . . . you can just put it in the oven at 180° for 30 minutes or put it in the freezer and save it for an other day !

A nice lean pork fillet that is set inside a baguette, the baguette is cut in half and I spread sausage meat on the bottom and on the top insides of the bread. Then I wrap the baguette with pancetta . . . . the result is crunchy, tasty, juicy . . . . . wonderful !!

To prepare it you preheat the oven to 180° and put it in the oven covered for 20 minutes and uncovered for 15. When you take it out of the oven let it sit on the counter covered for about 5 minutes, this way the juice from the meat will be soaked up by the bread and it will taste wonderful!

The ingredients here are: Bread, sausage, pork fillet, salt, rosemary and sage, and pancetta.

For 4 people will be Euro 25,00

Pasta al Forno

Pasta al forno is one of the favourites in my family !

The ingredients are:
Tomato sauce made with carots, onion cellery and oil. Short pasta like penne or fusilli or sedani, mozzarella, prosciutto cotto (cooked ham), parmesan cheese and naturally olive oil.

The great thing about this dish is that you can "hide" the whole dish in the freezer and eat it any time ( within a month or so)

To heat it from fresh just put it in a hot oven ( around 180 / 200°C) for 10 minutes covered and 10 uncovered.

To thaw it from frozen you should remove it from the freezer in the morning if you wish to have it for dinner ( or the night before if you wish to have it for lunch) and let it sit at room temperature for 3 or 4 hours.

The price of this dish for 4 people is Euro 14,00

The dishes I use are disposable alluminum pans for 4 people, if you wish to get a larger one, or if you would like me to prepare it in a dish of your own . . . just let me know !!

Pasta e Fagioli

This is one of the most anchint recipes ! I make my pasta e fagioli quite dry, some people like it more runny . . . . it is a matter of taste!

The ingredients are:

Cannellini beans, garlic, rosemary, vegetable broth, pasta, tomato concentrate, and naturally extra virgin olive oil.

The portions I make are in an alluminum disposable dish and are usually for 4 people, if you wish for a larger dish please let me know

The price that I will charge for a dish ( for 4 people) is Euro 7,00.

To heat the pasta just pour the dish in a deep pot, and add broth or hot water and set over a medium low flame for about 10 to 15 minutes.

If you like it more runny just add more liquid.

Before serving you should pour a little bit of olive oil and freshly ground pepper.

I will prepare 2 dishes of great homestyle Italian food every week, I will tell you ( usually in advance) what I will prepare each week. If you are interested in one or both dishes, just let me know !

My Idea

Hello !

And Happy New Year !!

welcome to my blog !!

As you know my job is to help you reach your wellness goals, lose weight, gain energy, feel great, eat healthy, have more free time and make money !

Wellness is a word that has been used and abused lately . . . but what does it really mean?

From wikipedia:"Wellness is generally used to mean a healthy balance of the mind, body and spirit that results in an overall feeling of well-being"

So basically - wellness is being healthy inside and outside, and happy inside and outside !
